So how would one tell if Blue Cheese has gone bad? Does it mold? And how is this mold different from the usual mold? Does is smell? And how would this smell be worse than the usual smell? I mean honestly folks, how am I supposed to know when the Blue Cheese has gone bad? Or does it just go good?

My theory: as long as the cheese is only white and blue, feel free to eat it. If you seen green or any other color, probably best not to eat unless you particularly enjoy gastrointestinal issues.
